Warm Chocolate Melting
Cake …aka Lava Cake
Ingredients:
12 teaspoons plus 5 tablespoons of sugar
8 oz bittersweet (not unsweetened) or semi-sweet chocolate,
chopped
¾ cup butter
*3 large eggs
3* egg yolks (yes, that is 3 eggs and then 3 extra egg
yolks)
1 tablespoon flour
ice cream to serve with dessert
Preparation:
Generously butter 8- ¾ cup soufflé/ramekin cups. (I partially melted the ¾ cup butter
from ingredients and then brushed the cups with it, and saved the remaining
butter for later) Sprinkle inside of each dish with 1 ½ teaspoon sugar. Set
aside.
Stir chocolate and butter in a heavy saucepan over low heat
until smooth. Remove form heat. In separate bowl with electric mixer beat eggs,
egg yolks, and remaining sugar.
Beat until thick and pale yellow, about 8 minutes.
Fold in 1/3 warm chocolate mixture into egg mixture, then
fold in the remaining chocolate. Fold in flour. Divide into dishes. (Can be
made a day ahead and chilled, then bring to room temperature before
continuing.)
Preheat oven to 425. Place ramekins on a baking sheet. Bake
until cakes edges are puffed and slightly cracked but center 1 inch moves
slightly when dish is shaken gently, about 13 minutes. (in my electric oven it was done in 10)
Serve immediately with ice cream and enjoy!
* it is ooey gooey in the center, not dry

This cake is delicious...to anyone who reads this and wonders if they should make it. (Not that I have ever made it...just benefited from someone else doing so!;)
