Warm Chocolate Melting Cake

Warm Chocolate Melting Cake!

Lava Cake

12 teaspoons plus 5 tablespoons of sugar

8 oz of bittersweet chocolate/semisweet chopped (I just milk chocolate chips and it was just fine)
3/4 cup ( 1 1/2 sticks) butter
3 large eggs
3 large egg yolks
1 tbspoon all purpose flour

Butter eight 3/4 cup souffle dishes or custard cups. Sprinkle inside of dish with 1 1/2 teaspoons of sugar

Stir chocolate and rest of butter in heavy saucepan over low heat until smooth. Remove form heat. In separate bowl beat eggs, egg yolks, and and remaining 5 tablespoons of sugar until thick and pale yellow, about 8 minutes. Fold 1/3 of warm chocolate into egg mixtures, then fold in the rest. Fold in flour. Divide batter in dishes (can be made a day ahead and cover with plastic and chill, bring to room temperature before continuing). Preheat oven to 425. Place souffle dishes on baking sheet. Bake cakes uncovered until edges are puffed and slightly cracked but center 1 inch moves slightly when dishes are shaken gently, about 13 minutes.

Serve with ice cream!
